You know what is a great way to medicate during the day?  Peanut Butter Cookies.  That’s what.

After a bit of tweaking, I can call this Best PB Cookies Ever.  My testers are in 100% agreement on this fact as well.

Yield:  39 cookies, using a #30 scoop
Dosage:  approx 7mg THC per cookie
Time:  About 1 hour, start to finish
Equipment: 

  • one large bowl
  • one small bowl
  • wooden spoon
  • spatula
  • measuring cups
  • measuring spoons
  • #30 cookie scoop
  • cookie sheets/baking trays
  • parchment paper for cookie sheets (optional but a good idea)

Oven:  preheat to 350F

Ingredients:

  • 1 cup/8 oz Cannabis Butter (I used ChemDog for my infusion)
  • 1 cup creamy peanut butter
  • 1 cup sugar
  • 1 cup brown sugar, packed
  • 2 each eggs
  • 2 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1 1/2 tsp baking soda
  • 1/2 tsp salt
  • 4 oz mini chocolate chips
  • 1/2 cup dry roasted peanuts, roughly chopped
  • large flake sea salt, optional

Traditional creaming method here:  pool your eggs in the small bowl and reserve.  In the large bowl, cream together the butter and sugars, making sure they are well incorporated.  Add peanut butter and mix.  Add eggs one at a time, beating until completely incorporated.

Add dry ingredients and mix until 3/4 combined. Add mini chips and dry-roasted peanuts and mix until just combined.  Don’t over mix or your cookies will be tough.

Drop scoops onto parchment-lined cookie sheets, sprinkle cookie mounds with sea salt (Maldon is great) and bake at 350 for 13-15 minutes.  There is a lot of moisture in these, so they do take longer to bake.  They will look underdone when you pull them out, but they firm up after sitting for 5 minutes or so.

Peanut Butter is a great mask for the strong taste of ChemDog, which has a strong diesel odor.  You can’t taste the cannabis in these at all, which makes them great for med patients who are not tasting foods the way they used to.

VEGAN:  Use Earth Balance for your cannabis infusion.  Use egg replacer instead of chicken eggs.  Flax egg is a bit too weak for all the moisture in this recipe.  If you use natural peanut butter (i.e. unsweetened peanut puree), you will need to increase sugars to 1 1/4 cups each and up the flour amount to 2 3/4 cups.  Sugar increases spread, so those cookies will spread and be flatter and crispier.  FYI.
