I’m testing new recipes for the Second Edition, and came across this recipe for Chocolate White Chocolate cookies.
Now. I have Many Opinions on white chocolate, namely that it is not actually chocolate and that no matter the brand, it almost always tastes like an Easter Bunny. White chocolate? Not my favorite kind of chocolate.
However, this cookie recipe is really quite special.
And I’m going to share it with you, so you can make this and Medicate like a rock star. These are sweet and swoon-worthy. My friend Liz claims these as her absolute favorite.
Chocolate White Chocolate Cookies
This recipe adapted from Ina Garten
Yield: 32 cookies
Dosage: Approximately 8mg THC per cookie
Time: 1 hour
Equipment:
- standing mixer or hand mixer
- small bowl
- medium bowl
- measuring spoons
- measuring cups
- rubber spatula
- sieve or sifter
- #40 cookie scoop
- cookie sheets
- parchment paper
Oven: 350F
Ingredients:
- 1 cup (8 oz) Cannabis Butter
- 1 cup light brown sugar, packed
- 1 cup granulated sugar
- 3 eggs
- 2 tsp vanilla extract
- 2/3 cup cocoa powder, good quality
- 2 cups all-purpose flour
- 1 tsp baking soda
- 1 tsp salt
- 1/2 tsp cinnamon, ground
- One 10-oz package white chocolate chips, good quality
Method:
Measure out dry ingredients (cocoa, flour, baking soda, salt and cinnamon) and sift into medium bowl. Reserve.
Pool eggs and vanilla in small bowl and set aside.
In the bowl of a stand mixer, place sugars and Cannabis Butter. Cream on medium speed using paddle attachment until sugars are completely incorporated and butter is fluffy. Scrape down bowl and paddle.
On medium speed, stream eggs into butter/sugar mixture. Mix until completely incorporated. Scrape down bowl and paddle.
Add dry ingredients and mix until 3/4 incorporated. Add white chips and mix on low until there are no dry bits and chips are distributed evenly. Do not mix the crap out of your dough, or you will get tough cookies. 😦
Using a #40 cookie scoop, scoop level mounds onto parchment paper-lined cookie sheet.
Bake @ 350 for 12 minutes, turning halfway through. They will seem really underdone, but you don’t want to bake the bejeebus out of these.
When done, allow cookies to rest on rack until completely cool.
VEGAN: Use Egg Replacer instead of chicken eggs and use Cannabis-infused Earth Balance Vegan Shortening.
GLUTEN-FREE: Sub GF flour mix for wheat flour and make sure vanilla extract is pure (not imitation) and gluten-free as well.
